Ollie Announces A Winner !

My precious Ollie wanted to announce the winner for me today (from the comfort of her Winter blanket, of course) !

And The Winner Is ……………..

Elenka from Portland, Maine, USA who’s wonderful blog ‘Downeast Doing Stuff’ can be found by clicking here. Congratulations, Elenka !

Elenka has been a regular reader of this blog for sometime now, and as she is a fellow cat lover, I decided to use my beloved Ollie (who doesn’t often feature on the blog as she’s rather shy !) to make the announcement today ! (You can read Ollie’s rescue story over here – when I found her she was a kitten probably a day or two away from death, and now she is a fat, happy and thriving 8 year old cat).

Please do go along and visit Elenka’s blog – as she is also an artist and some of her wonderful work is featured on her blog. (I should also add that she has a great sense of humour, one that really appeals to me and most of her posts have me in fits of laughter !)

Elenka, if you’d like to email me (click on the ‘Contact Me’ tab at the top of the blog) your address, I can then post your prize to you when I am next in the city.

I just wanted to say that I really enjoyed reading through everyone’s favourite childhood food memories – each and every one was very special, and I just want to thank you all for sharing them ! What struck me about the majority of the memories, is that they mostly involved mother’s or grandmother’s – which just shows what an important role women play when it comes to food in the life of a child. And made me realise even more so, why it is important for me to encourage a love of food and cooking in my own two children from an early age. (I can’t help but wonder what their favourite childhood memories will be one day !)

As you’ve all shared your favourite childhood food memory with me, I guess I should share mine with you – some of you may have already read it and if not, you can do so by clicking here and reading the ‘interview’ I had with ‘Food & Taste’ as a guest blogger last year, where they asked me that same question.

So, once again – CONGRATULATIONS, Elenka !

This is how I drew a winner – I counted the number of entries (counting Sharon’s as 1 entry and omitting Caroline’s as she did not wish to enter) and came to 28. I then went to RANDOM.ORG and entered the range 1 to 28 and it generated the no 19. I then counted down to the 19th entry/comment which was Elenka’s ! (I have included a screen shot of the results – see the little box on the right hand side).

You can click on the image above to enlarge it & see how I drew a winner !

Honey Cake - Light & Delicious !

This honey cake is delicious served with tea, or as a dessert with whipped cream or custard .....

This is a lovely, light cake which tastes delicious served either on it’s own with a nice cuppa tea, or for dessert with whipped cream or custard.

I was tempted to add some mixed spices to the batter when I made this recipe for the first time – but I honestly don’t think it needs it. The honey topping is subtle, with just a hint of lemon flavour – so don’t let the addition of the lemon juice put you off (as it did me – I immediately thought ‘cough cure !’ but I can assure you that it doesn’t taste like that at all !)

Honey Cake (from the book ‘ Cook and Enjoy It’ by S.J.A. de Villiers – wording for ‘method’ changed slightly)

Cake Mix:
1 cup Flour
½ cup Sugar
4 tsp Baking Powder
¼ tsp Salt
½ cup Milk
3 tbsp Butter
1 Egg

Cake Topping:
3 tbsp Honey*
1 ½ tbsp Butter
1 tbsp Lemon Juice

Sift together the flour, sugar, baking powder and salt. Heat the milk and butter in a small saucepan until lukewarm, beat in the egg & add to the sifted dry ingredients, blending well. Turn the batter into a greased, round pie dish or cake tin (approx 21 cm/9 inch in size) & bake at 180’C/350’F/Gas Mark 4 for 15 to 20 minutes until a skewer inserted in the middle comes out clean. Place the honey, butter and lemon juice into a small saucepan and melt together over a gentle heat. Pour over the hot cake as soon as it comes out of the oven.

*The recipe states that you can also use Syrup in place of honey – which I guess would then make it a Syrup Cake ?!

A School Trip To The Farm .....

A couple of months ago, we had our daughter's school visit the farm for a day trip. Each term they have a different theme, and this term's theme was 'Professions' and they came out to the farm for the day to learn about farming as a profession. There were 22 children and 6 adults (parents and teachers) who all came out to the farm in a convoy of about 5 vehicles. Our daughter was terribly excited as she got to show all her friends where she lives !

They arrived mid morning, and after snacks and drinks and a bit of time to stretch their legs & run around our garden after the 1 1/2 hour car journey, we loaded them all up onto a trailer attached to one of the tractors (with parents and teachers on the back to make sure that none of them tried any funny tricks !) and off we went to show them the farm.

Hubby drove the tractor, & I sat in front with him in the cab with our baby son in one hand ..... and my camera in the other ! The photo below shows the kids in a field of beans which we stopped to show them. These beans are the 'baked bean' variety ........

We also stopped in a field of wheat to show them that and teach them all about it ..... look at them all clamouring to have a better look at the wheat seed my husband is showing them - just soooo cute !

After our trip around the farm, we had a quick tour of the workshop and equipment before everyone came back to the farmhouse for a light lunch underneath the shady fig tree at the bottom of our garden. I had set tables up for the food & drinks (Cheese & Tomato and Egg Mayonnaise Sandwiches, carrot and cucumber sticks and Apple juice), and big picnic blankets for the kids to sit on.

After lunch I served pink iced cupcakes which I'd made - the kids really enjoyed these ! (Believe it or not, I was so busy I forgot to take even a single photo of any of the food I made/served - so you'll just have to take my word for it !)

So, a fun day was had by all ! (If you'd like to read about a school camping trip which was held on the farm earlier this year, you can click here.)
